4 Ingredient Frozen Watermelon Margaritas

Last Saturday, as we walked through the parking lot on our way into the grocery store, both my boys said “Mom, Mom, Moooooom, can we get a watermelon?” ¬†They had both fixed their eyes on a large display of watermelons, and who am I do deny them the quintessential fruit of the summer? ūüėČ ¬†The problem with watermelons? ¬†They tend to be huge and often times there is more watermelon than anyone cares to eat. ¬†If you ever find yourself in that situation, I have the perfect solution for you. ¬†Or you might not have leftover watermelon, but you are looking for a cold, refreshing, easy, 4 ingredient adult beverage. ¬†If that’s case, I’ve got you covered too. ¬†Meet my 4 ingredient Frozen Watermelon Margarita. ¬†It’s soooo easy to make, tastes cold and refreshing, and c’mon it’s summer!! ¬†Whip up a batch, kick your feet up and pretend you’re on a tropical island. ¬†

Chorizo Taco Pizza

My husband and kids love pizza and they love tacos. ¬†If I’m being honest, even though I also really enjoy Mexican food, sometime I just get tired of eating tacos and burritos. ¬†There, I said it – will you still love me? ¬†One night, I looked at the ingredients in my fridge and the idea for this Chorizo Taco Pizza was born. ¬†It’s Mexican flavors on top of a pizza crust, but it doesn’t feel like your eating a taco or a pizza, it’s just straight up delicious. ¬†What’s not to love? ¬†There’s a crispy crust, chorizo, black beans, lettuce, avocado, onion, jalapeno, eggs, and cheeeeeese. ¬†

Creamy Dreamy Shrimp & Vodka Sauce Pasta (With Fresh Tomatoes!)

This Creamy Dreamy Shrimp & Vodka Sauce Pasta has a secret ingredient. ¬†Do you want to know what it is? ¬†The secret ingredient makes the vodka sauce extra creamy and thick, provides some tang, and is downright delicious. ¬†Ready? ¬†It’s goat cheese. ¬†Goat cheese is melted straight into the vodka sauce and trust me, it’s the way to go. ¬†I also added goat cheese as a garnish, but it’s the goat cheese that’s IN the vodka sauce that is the hidden gem. ¬†The flavor of the goat cheese is not prominent in the sauce, in fact, I don’t think you could detect it if you didn’t already know it was there, it blends beautifully with the flavor of the vodka sauce. ¬†We have even gotten to the fresh tomato flavor yet. ¬†Are you ready to get cooking? ¬†This dish comes together quickly and has outside dinner party written alllllll over it.¬†

Everything But the Kitchen Sink Cherry Brownies

You guys, I am obsessed with these brownies!! ¬†In fact, I may have eaten half the pan myself……I call these Everything But the Kitchen Sink Cherry Brownies, because they have a lot going on, but the main star (aside from the brownie base of course) are the cherries! ¬†I oven roasted fresh cherries so they are tender, juicy, and a little flavor punch to an otherwise dense and chocolaty brownie. I then added marshmallows, walnuts, and chocolate chips. ¬†The top is finished off with a chocolate glaze and mmmmmmmmmm it.is.perfection. ¬†

Easy Greek Chicken Pitas

Confession: I’m a bit of an introvert and not very good at hosting people at our house. ¬†I always enjoy it when we do have people over, but for some reason, I just don’t do it that often. ¬†As my kids are getting older (they’re currently 4 and 7) I’d like to start inviting family and friends over more frequently. ¬†One thing that I don’t love about hosting is the time you have to spend to prepare all of the food (let’s not even get into cleaning the house!). ¬†Last weekend I got the idea for this Easy Greek Chicken Platter and I have to tell you, it’s going to be my new go to hosting meal. ¬†It’s easy, take almost no time at all and with all of those toppings choices, there’s sure to be something for everyone. ¬†I have another confession, I took some major help from my grocery store to pull this off – details below! ¬†

Spicy Ginger Beer Margaritas

Picture this – It’s a beautiful day, the sun is shining, it’s a long weekend, maybe you’re relaxing by the pool, or you’re hanging out with friends or family in your back yard, and in your hand is a crisp, refreshing, perfectly balanced slightly spicy slightly sweet and tart Spicy Ginger Beer Margarita. ¬†Does that not sound like an absolute dream?! ¬†You’re in luck, because I happen to have the recipe to the perfect summer drink below and it also happens to be the start of a holiday weekend. ¬†You can make this happen, let’s do this.

The great thing about this recipe is that you can adapt it to your own spice level. ¬†I’ve made it on the more mild side, but if you like the heat, simply add more jalapeno. ¬†I recommend tasting it first as written and than adjust to your own preferences. ¬†More tart? ¬†Add more lime juice. ¬†More sweet? Add more ginger beer. ¬†More spice? ¬†Add more jalapeno. ¬†You get the idea,right?

What do you guys have planned for the weekend? ¬†We are going with our neighbors to their lake house. ¬†I have a confession, this will be my first time going on a lake vacation! ¬†I grew up about an hour from the beach and the ocean will always be my happy place, but I’m excited to try something new. ¬†Being with family and friends is what life is all about and we’re definitely going to be sipping on these special babies this weekend!


Now, let’s get down to business:


3-4 limes, depending on the size.  (I used 4 smaller limes).

2 slices of jalapeno (cut the jalapeno into circular slices)

1/2 shot of triple sec (optional, if you don’t have it on hand feel free to leave it out and add more ginger beer or simple syrup if you prefer it a little sweeter)

2 shots of tequila

1 bottle of ginger beer (non alcoholic and can be found in many grocery stores)

Salt on the rim (We prefer no salt in our house!).


  1. Squeeze lime juice into the bottom of a cocktail shaker.  Add the 2 slices of jalapeno and muddle in the bottom with the lime juice.  I used the bottom of the handle of an ice scream scoop to muddle the jalapeno.  The harder you muddle the jalapeno, the spicier the drink will be.  Once muddled, use a spoon and scoop out the jalapeno.  If you leave it in the shaker it will make the drink much spicier.
  2. Add the triple sec and tequila to the shaker along with some ice, add the lid and give it a good shake!
  3. Pour into a glass, I used a square ice cube in our drinks, and add the ginger beer.  Add enough ginger beer to fill the glass about 3/4 of the way up.  You will have leftover ginger beer.  Taste and adjust as needed.  Add more lime for tartness, ginger beer for sweetness and jalapeno slices for spice.  Enjoy and cheers!

You guys – I like you, which is why I’m begging you, pleeeeease make this dish. ¬†I started making this Fettuccine Alfredo & Teriyaki over twelve years ago when I was in college and it’s been a constant ever since! ¬†The combination of the two sauces is to.die.for, I promise. ¬†It’s a salty and sweet match made in heaven. ¬†Trust me, you will be shoveling this in, it’s that good!
