Orange Pineapple & Coconut Smoothie

Raise your hand if you’re ready for summer!  If you could see me, I’m waiving my hand high up in the air.  I’m so ready for the slower pace that summer brings.  There won’t be any running around to various soccer activities, packing school lunches, or spring yard work to contend with.  I’m looking forward to laid back gatherings with friends and family.  As my mind is on summer, I’ve found myself craving tropical flavors, and this Orange Pineapple Smoothie delivers major tropical vibes.  It’s cool, refreshing, healthy, and will give you a natural energy boost – I mean what more can you ask for?

 

Warning – you must love coconut to enjoy this smoothie.  It has triple the coconut flavor from frozen young coconut meat, coconut milk, and shredded coconut.  Coconut is certainly the dominate flavor here, with the orange and pineapple serving as refreshing undertones.  If you love coconut, think you might enjoy coconut, or aren’t sure but willing to give it a try, than I think you will truly enjoy this smoothie.  Both my 4 and 7 year old boys had zero problems gobbling it up.  Also, if you have any reservations about adding the frozen spinach, you cannot taste the flavor whatsoever.  Aside from the green color, you would have no idea it was in the smoothie, which is perfect for kids or even adults who are vegetable lovers.

I made this smoothie in my Vitamix, but I don’t see why any high powered blender wouldn’t do the trick.  This smoothie comes out on the thinner side, and I chose to drink mine out of a glass, but my kids love smoothie bowls and the toppings they get to add, so feel free to roll with it however suits you best

This smoothie bowl is topped with shredded coconut, hemp hearts, and blueberries.  Other delicious toppings that come to mind: strawberries, pineapple, bee pollen, granola, sliced almond, even bananas – whatever toppings you love, toss ’em on.  Unless, you’re like me and in a hurry and trying to multitask and decide it’s just faster and simpler to slurp it down plain with a straw – I promise it still tastes delicious!!  Give this Orange Pineapple Coconut Smoothie and try and while you’re at it, kick back, relax and let the sunshine warm your face.  Happy eating, Friends!

Ingredients: Serves 4

1 package young coconut meat (I purchased mine from Earth Fare, a regional health food supermarket)

1/2 cup coconut milk (If you want a less intense coconut flavor, try substituting almond milk or another type of milk)

1/2 cup almond milk

1 cup loosely packed frozen spinach

1 tablespoon hemp hearts

1 tablespoon chia seeds

1/4 cup shredded coconut

2 oranges, quartered with skins removed

1 cup pineapple

2 cups ice, or more for a thicker consistency

 

Instructions:

Place all ingredients except for the ice in a high powered blender.  I generally put my coconut and almond milk in the bottom and then add the other ingredients.  Blend until smooth, stopping to scrape down the sides of the blender as needed.  Once a smooth consistency is reached, add in the ice and blend again until smooth.  If you prefer a thicker consistency, add more ice.  Pour into glasses or bowls and enjoy!
