Easy Greek Chicken Pitas

Confession: I’m a bit of an introvert and not very good at hosting people at our house.  I always enjoy it when we do have people over, but for some reason, I just don’t do it that often.  As my kids are getting older (they’re currently 4 and 7) I’d like to start inviting family and friends over more frequently.  One thing that I don’t love about hosting is the time you have to spend to prepare all of the food (let’s not even get into cleaning the house!).  Last weekend I got the idea for this Easy Greek Chicken Platter and I have to tell you, it’s going to be my new go to hosting meal.  It’s easy, take almost no time at all and with all of those toppings choices, there’s sure to be something for everyone.  I have another confession, I took some major help from my grocery store to pull this off – details below!  

Spicy Ginger Beer Margaritas

Alright you guys, Memorial Day is one week away, do you know what you’re making?  No?  Fear not, I have you covered!  You’re making these Teriyaki Pulled Chicken Sandwiches with Mango Slaw.  They’re perfectly salty from the teriyaki sauce, sweet and juicy from the mango, crunchy from the purple cabbage, all stuffed between a steamed, soft bun.  Can’t you just envision sinking your teeth into it?  At which point your say, mmmmmm this is so delicious.  Don’t worry, I can take this one step further for your laid back, easy breezy Memorial Day – it can ALL be prepped in advance.  You see you’re off socializing, playing with your kids, kicked back in your hammock soaking up the sun.  What you are not doing?  Slaving over a stove.  Winning!

Fettuccine Alfredo & Teriyaki

You guys – I like you, which is why I’m begging you, pleeeeease make this dish.  I started making this Fettuccine Alfredo & Teriyaki over twelve years ago when I was in college and it’s been a constant ever since!  The combination of the two sauces is to.die.for, I promise.  It’s a salty and sweet match made in heaven.  Trust me, you will be shoveling this in, it’s that good!

Strawberry & Cream Ice Cream Sundaes


Strawberries and cream, these two just simply belong together.  The key to these delicious strawberry and cream ice cream sundaes is: fresh strawberries!  This is the perfect dessert to have during strawberry season.  It has the flavors of strawberry shortcake, but it takes it up a level, letting the strawberries be the star!  This sundae is so easy to make and tastes absolutely decadent.  Once bite and you will be hooked!
