Friends, cherry season is upon us and you NEED to make this Cherry Balsamic Bruschetta. The cherry flavor pairs so beautifully with the balsamic vinegar. It’s light, fresh sweet, salty and down right delicious!
This dish is the perfect summer appetizer. You can prep the cherry and tomato mixture ahead of time and assemble the bruschetta just before serving. I promise you won’t be able to stop at just one! My son ate two and my husband ate four 🙂
I drizzled balsamic glaze on the top and it is definitely a game changer. You can find it in the grocery isle near the balsamic vinegar. It’s much thicker and really helps to bring forth the balsamic flavor.

2 french baguettes
6 medium size tomatoes, diced with seeds removed
2 generous cups of whole cherries
1 tablespoon spoon packed basil
2 tablespoons balsamic vinegar
salt and pepper to taste
3/4 to 1 pound of gorgonzola cheese (or sub blue cheese)
Balsamic glaze for drizzling over the top
- After you measure out two cups of cherries, cut around the pit and then chop the cherry pieces into small pieces. Add to a bowl with the diced tomatoes. Be sure to remove the seeds from the tomatoes.
- Add to the same bowl the balsamic vinegar, chopped basil, and salt and pepper. Stir to combine.
- Slice the baguette and spread on it a generous amount of gorgonzola. Be sure to buy a gorgonzola or blue cheese that is creamy and will spread well on the bread.
- Next add the tomato/cherry mixture to the top of the bread. Drizzle with the balsamic glaze and garnish with basil.
