Hello! It’s a lively Saturday night here in North Carolina – we’ve been to Five Guys, Best Buy and cleaned out the garage – I know, I know, you’re completely jealous aren’t you? At least I can say that I’ve discovered you’re next pizza craving – chicken fajita pizza! What could be better than combining fajita flavors and ingredients with a pizza? You can customize the toppings to your own preferences, think jalapenos, lettuce, tomatoes, cilantro, sour cream….or better yet, rummage around your fridge and use what you have on hand. Either way, it’s bound to be delicious.
For this pizza I used sliced chicken, bell peppers and onions all tossed in taco seasonings and piled on top of a crunchy pizza crust that I par-baked on a cookie sheet. Then I added mozzarella and cheddar cheese, sour cream, jalapenos, and cilantro. It turned out really tasty and dare I say it – on the lighter side. It hit all of my fajita and pizza cravings without leaving me feeling like all I could do was binge watch Netflix. Surely we’re all guilty of that from time to time right?!
This pizza is perfect by itself, but it you want to get fancy serve it with a side salad, chips and guacamole, or even rice and beans. I hope you enjoy it as much as we did! Chicken Fajita Pizza - Combining fajita flavors and ingredients with a pizza! Customize the toppings to your own preferences, think jalapenos, lettuce, tomatoes, cilantro, sour cream….or better yet, rummage around your fridge and use what you have on hand. It's delicious!
- 1 pizza dough ball (I purchased mine from the grocery store)
- 1 cup pizza sauce
- 8 oz shredded mozzarella cheese
- 4 oz shredded cheddar cheese
- 2 chicken breasts cut into fajita strips
- 1 red bell pepper cut into strips
- 1 yellow bell pepper cut into strips
- 1/2 onion, sliced
- 2-4 tbsp taco seasoning
- Olive oil for sauteing
- Optional toppings: sour cream, salsa, avocado, tortilla chips, lettuce, jalapenos
Preheat the oven to 375 degrees. Roll pizza dough out into a rectangle and press into a very lightly greased cookie sheet.
Spread 1/2 cup of the pizza sauce and 1/2 cup of the mozzarella cheese onto the bottom of the crust. Place the baking sheet in the bottom third of the oven and bake for 15 minutes or until crisp but not browned. Remove from the oven once it reaches this point.
While the crust is par baking, place the chicken strips in a bowl and toss with a little olive oil and 1 to 2 tablespoons of taco seasoning (depending on how spicy you like it). Saute the chicken in a pan until browned and cooked through, approximately 5 – 6 minutes depending on the size of the chicken strips.
Place the bell peppers and onions in a bowl and toss in olive oil and 1 to 2 tablespoons of taco seasoning. After the chicken is cooked, remove from the pan and cook the vegetables in the same pan.
Increase the oven temperature to 425 degrees. Add remaining sauce to the pizza. Top with 1/2 of the chicken and vegetables and then top with the remaining cheese. Place the remaining 1/2 of the chicken and vegetables on top of the cheese. Put back in the oven and cook for 10 to 15 minutes until the cheese is bubbly and the crust is browned.
Top with sour cream, chips. cilantro etc
