Chorizo Taco Pizza

My husband and kids love pizza and they love tacos.  If I’m being honest, even though I also really enjoy Mexican food, sometime I just get tired of eating tacos and burritos.  There, I said it – will you still love me?  One night, I looked at the ingredients in my fridge and the idea for this Chorizo Taco Pizza was born.  It’s Mexican flavors on top of a pizza crust, but it doesn’t feel like your eating a taco or a pizza, it’s just straight up delicious.  What’s not to love?  There’s a crispy crust, chorizo, black beans, lettuce, avocado, onion, jalapeno, eggs, and cheeeeeese.

Feel free to customize this pizza with more or less of the ingredients your family loves or you happen to have on hand in your fridge/pantry.  The only downside to this pizza is that there likely won’t be any leftovers – it’s that yummy!  The upside?  It comes together easily with minimal dishes.  You’re welcome 🙂

Serve this Chorizo Taco Pizza up with a side of rice, refried beans, or even fruit.  Chips and salsa or guacamole are also a great idea!

Make it for dinner, make it for a late night snack, or make it for brunch….just make it!

1/2 of an onion finely chopped

1 pound of chorizo

1 cups of black beans

1 tablespoon taco seasoning

1 store bought pizza crust

1/2 cup of pizza sauce (or pasta sauce works well too)

4 ounces of shredded monterey jack cheese

4 ounces of shredded pepper jack cheese

1/2 head of romaine lettuce, finely chopped

3 tablespoons olive oil

3-4 eggs

Suggested Toppings:

avocado slices, jalapeno, red onion, cilantro, sour cream and salsa

  1. Preheat your oven according the instructions on your store bought pizza crust.  I like to buy thin pizza crusts that already come formed in a circle (not a dough ball you have to roll out).
  2. Add chorizo to a dry pan and cook over medium heat for about 10 minutes, stopping to break up the meat as it cooks.  My chorizo came in a casing which I removed prior to putting it in the pan.  Next, add the onions and black beans and cook with the chorizo until the onion is softened.  Add the taco seasoning and stir to combine.
  3. Spread the pizza or pasta sauce onto the pizza crust and then top with the chorizo and black bean mixture.  Next add both types of cheeses and cook according to the package instructions for the pizza crust, or until crust is crispy and the cheese is melted.
  4. While the pizza is cooking, pour olive oil into the same pan you used to cook your chorizo.  Add your eggs and cooked until desired consistency.  After you remove the pizza from the oven, top with lettuce, eggs and any other toppings you desire!
