Heirloom Tomato & Bacon Tortellini Pasta - A quick, fresh and easy summertime meal.  Ready in under 30 minutes.  Bright heirloom tomatoes, salty bacon and creamy tortellini pasta - this will quickly become your new go to weeknight meal.  Enjoy!

Servings: 4
  • 1/2 package of bacon
  • 1 20 oz package tortellini
  • 1 1/2 cups ricotta cheese
  • 1 package grape or cherry heirloom tomatoes, sliced into thirds or quarters (I used 12 oz or about 1 1/2 cups)
  • 1 zucchini diced
  • 1 tbsp butter
  • 1 garlic clove minced
  • 1/2 cup pasta water (reserve before draining the tortellini)
  • parmesean cheese for topping
  1. Cook bacon according to package instructions and set aside to drain on paper towels once cooked.

  2. While the bacon cooks, boil the pasta water and cook the tortellini according to the package instructions – approximately 5-7 minutes. Be careful not to overcook the tortellini, you want them to have a little “bite” to them. Also be sure to reserve one cup of the cooking water prior to draining the tortellini. This will be used to make the sauce.

  3. While the tortellini cooks, melt the butter in a saute pan and add the garlic for a few seconds followed by the zucchini. Cook for 3-4 minutes.

  4. Mix the ricotta cheese with salt and pepper to taste, next add 1/2 cup of the pasta water at a time. Depending on how thin you want your sauce to be, you may want to add only 1/2 cup of pasta water or you may want to add the entire cup.

  5. Pour the ricotta sauce over the tortellini. It’s okay if the sauce doesn’t look smooth – it will be delicious. Top with crumbled bacon, zucchini, heirloom tomatoes and Parmesan cheese. Enjoy!
